Cemitas… no se andan con juegos en Puebla.
Cemitas are a type of torta originally from the state of Puebla.
Years ago, I used to attend a University over in Cholula (UDLA), and there was a small cemita shop on the main street called Camino Real. Nothing fancy you know, just plastic chairs and tables, plastic cloths and a worn out TV that usually played Telenovelas. I found this shop due to the incapability of cooking (had way too many roomates at the time and they amusingly left the stove so dirty that the thoughts of eating were quickly vanished)
At the time cemitas would cost 25-30 pesos which is barely 3 dollars. I couldn’t understand the massive amounts of food the lady used on the cemitas. Complete breaded steaks (milanesa), a whole avocado, a handful of stringed Oaxacan cheese, ham, beans, chorizo… everything just kept piling on. My exchange gringo friends couldn’t believe it either… they had arrived to heaven.

I ate a few here and it’s the shit, with ingredients mostly you can get here and not the original ones, but it was GREAT.
